Earlier this year Dan, our Head Roaster took part in a roasting competition held by one of our import partners, Falcon. Each competitor bought the same lot of this coffee, El Arryan - Costa Rica. Then experimented with various sample roasts to find the best roast. The coffee was then sent back to Falcon for judging and against all, Dan's entry came second. We only have a limited amount of this remaining coffee, experience the juicy flavours of this competition lot. To retain the same roast profile, we shall be roasting to order using our Ikawa 50g sample roaster, as used in competition.

Farm Details: Hacienda San Isidro Labrador is situated in the Dota hills, Tarrazú region. It is a family-run farm focused on the production of specialty coffee. They have taken part in the Cup of Excellence for many years and obtained 1st place in COE 2017, 2nd place COE 2018, and 1st and 3rd places in COE 2019.

El Arrayan is a natural anaerobic lot made up of a blend of Red and Yellow Catuai. The coffee is grown at 1,850masl at the extreme western edge of the Hacienda San Isidro Labrador, facing the Dota valley. The shade trees Cuajiniquil (Inga) and Guineo (Musacas) protect the growing coffee from direct sunlight.


The wet milling process conserves the full cherry, which is then sealed into a plastic air-proof container for 120 hours, where the anaerobic fermentation takes place. The processed cherries are then dried on African raised beds, fitted with plastic micro-tunnels to protect the coffee from excessive night-time humidity and sporadic rains.
